Luxurious New Halong Bay Cruise Unveils Menu by Celebrity Chef

John Burton-Race Ushers In European Fine Dining Aboard Five-Star President Cruises

A menu crafted by British Michelin-starred chef John Burton-Race has been introduced on Halong Bay’s largest and most lavish cruising vessel.

Burton-Race, who has starred in a host of popular television shows including French Leave, Return of the Chef, I’m a Celebrity, Get Me Out of Here and the BBC’s Great British Menu and Kitchen Criminals, helped create the a la carte lunch and dinner menu on the new President Cruises.

Renowned for his modern British cuisine, Burton-Race has concocted an array of appetisers, soups, main courses, side dishes and desserts, in addition to a separate set menu. The ‘marinated salmon, salmon jelly with wasabi mayonnaise and caviar’ appetiser, ‘duck wanton broth’ soup, ‘fillet of beef with crispy shallots, sourdough croutons, olive oil butter and beef marrow jus’ and ‘loin of highland pork with pappardelle, peas, capers and rosemary cream’ mains, and ‘chocolate and nut ganache and poached pear with pear sabayon’ dessert are among the menu’s highlights.

It’s the first menu at Halong Bay to be crafted by a celebrity, Michelin-starred chef. A selection of world-class wines is on offer to pair with the dishes.

The menu’s launch follows Burton-Race travelling to Vietnam to host a dinner on January 5 as part of a special one-night cruise.

“We’ve really chartered new waters creating a culinary experience with a distinct European flavor at this UNESCO World Heritage-listed site; an incredible destination I’m eager to return to,” said Burton-Race, who has also trained President Cruises’ chefs and food and beverage staff.

In 2000, Burton-Race took over the Landmark London hotel. After notching up two Michelin stars at the Landmark, he then opened the New Angel restaurant and hotel in Devon that was awarded a Michelin star in 2005.


New luxury Vietnamese cruise operator Lion Asia debuted the first of two President Cruises ships at the UNESCO World Heritage site in November 2018. The second vessel will take to the water this year.

The 1200-tonne five-deck steel craft measures 86 meters long, 13.9 meters wide and 13 meters high, making it the largest overnight ship to ever ply Halong Bay’s waters. It is also the first on Halong Bay to include an elevator system catering to people with disabilities and the elderly.

In addition to a piano lounge and a spa, the ship is also home to two sun decks totalling 324sqm and 250sqm and 46 high-design cabins. The 130sqm President Suite offers a generous private terrace, open-air jacuzzi, private bar and dining area, and floor-to-ceiling windows affording sweeping vistas of the bay.

A limousine transfer service with reclining seats connects Hanoi with Halong Bay on a new highway that has cut the drive time between the destinations in half to two hours.
